Once the grapes are harvested, the vinification process gets underway, stage by stage, to transform the grapes into wine. Although the process has changed little over the years, each producer adapts it to suit the wine he or she wishes to produce, according to family tradition, the requirements of individual plots and the characteristics of the vintage.
As soon as the grape juice or must has finished the alcoholic fermentation and has become wine, ageing begins, either in vats or in barrels. This hones the personality of each wine, underlining its unique characteristics and revealing its complex aromas.
